This morning Paula from our catering group made a stunning lemon posset tart and topped it with some fresh mint from our garden. We are very lucky to have fresh herbs on the doorstep to utilise in our kitchen.

The catering trainees are busy working towards skills demonstrations in QQI Breakfast Cookery, Nutrition & Healthy Options and Handling Food Hygienically over the coming weeks.

Katie, catering trainee was busy preparing for her Level 3 Nutrition and Healthy Options module this week. She cooked a delicious stuffed portobello mushroom with crispy goats cheese and a beet and sweet potato tart.
