Spotlight on Catering - Breakfast & Lunch


A typical day in the kitchen involves preparing breakfast for the staff and trainees. This includes fresh made scones, toast, preparing a cooked breakfast, hot and cold cereals etc.

After breakfast we start preparing lunch for afternoon. This is a great way of practicing different skills, as the menu changes on a daily basis. When preparing the lunch menu. Catering trainees take into consideration the different dietary requirements for example: vegetarians, healthy options and food allergies.  
Examples of lunches Lasagne, Cottage Pie, Stew, Fish, Pasta, Salad, Chicken, Pork, Roast Beef, Vegetables, Pizza etc


As part of ongoing learning theory is incorporated into a typical day in the kitchen.

Certification Day - Personal Achievement Award

This year’s Personal Achievement Award went to a very worthy recipient; Andrew Farrell who achieved all his goals in the centre and since leaving has progressed onto a Level 5 Accounting Technician course in MSLETB.  We wish him every success for the future.

Congratulations!

Congratulations to the 20 learners from Sligo and Leitrim Community Training Centres who had their level 3 and 4 QQI awards approved at yesterday's result approval panel meeting. One learner also achieved a full ECDL award. We look forward to presenting these learners with their certificates in autumn.

Sports Course - Circuit Training

Circuit training is a regular part of our exercise programme each week and is conducted in a fun yet challenging manner increasing cardiovascular fitness. This also ties in with QQI modules that the sport trainees achieve at level 3 and 4 in health and fitness.

MSLETB Showcase Event

A group from the centre attended a very informative and engaging showcase at MSLETB Training Centre, Sligo this morning. An opportunity was given to view the great facilities and hear about the many courses on offer.

CTC Garden

Work began on Friday sowing vegetables and herbs for the season ahead. Danny and Diego are also working hard on the addition of new raised beds this year.

The Importance of Digital Skills

Last weekend the Sunday Business Post published an interesting article on the importance of digital skills in the workplace. Our computer course focuses exactly on this area by covering QQI level 3 and 4 modules along with a full ECDL award.
