Sligo Food Trail

Some of our catering trainees were involved in last Friday night's Gala Harvest Feast by Sligo Food Trail in the Radisson Hotel.  Aaron O'Rourke worked with Eva Hourihan the chef from Andersons Grill & Bar to help create the Duck Roulade. Aaron Rainey worked with The Glasshouse Hotel's Head Chef Alan Fitzmaurice to help create the dessert course called 'A Tasting of Orchard & Hedgerow'.  Former trainee Jake Flynn is now employed by Eala Bhan and worked with their Head Chef Marcin Szczodrowski to create the Artisan Cheese Tasting Plate.  Well done lads!

Sligo Food Trail Launch

Denyse and Sean from Catering attended the launch of the Sligo Food Trail last Wednesday evening in The Model. The Sligo Food Trail takes place in Sligo from June 14th to June 19th.
Some of the events taking place are:  "An exciting programme of talks, tastings and demonstrations from leading Sligo Food Entrepreneurs and cuttings edge chefs in and around the Factory Performance Space at Quay Street, Sligo featuring: Fermented and cultured foods, the secret of the best cup of tea, food from the sea, free range organic chickens, no-frills ice cream, soil based food, community gardens, foraging walks, pop-up restaurants and more. The Food Trail, offering tapas-style dishes from more than 25 of Sligo’s finest cafes and restaurants, will be back."
